Pour enough olive oil into your medium saucepan to coat the bottom. Heat the oil over medium heat. You'll know it's hot when it starts to shimmer slightly.

Add chicken broth, lemon juice, garlic powder, salt and pepper. Heat on high until boiling. Reduce heat to low, cover and simmer for 15 minutes
With the heat off, remove the lid and use a fork to fluff the couscous. This will separate the grains and give it a light and airy texture.
Stir in the chopped parsley and lemon zest. The parsley adds a pop of fresh flavor and the lemon zest brings a bright citrusy aroma.
Now is the time to taste your couscous and adjust the seasoning according to your preference. Add a squeeze of lemon juice, a pinch of salt, or some black pepper to brighten the flavors.
