Ingredients

  • 1/2 cup kosher salt approximately 120g
  • 1/2 cup packed light brown sugar approximately 100g
  • 1/2 cup paprika approximately 40g
  • 6 tablespoons freshly ground black pepper approximately 30g
  • 2 tablespoons garlic powder or 2 teaspoons minced garlic, about 10g
  • 2 tablespoons dried onion flakes about 10g
  • 1 to 2 teaspoons cayenne pepper depending on desired heat (4-10g)

Instructions

  • Combine: In a large, clean jar or airtight container, combine the kosher salt, packed light brown sugar, paprika, freshly ground black pepper, garlic powder (or minced garlic), dried onion flakes, and cayenne pepper.
  • Mix: Seal the jar tightly and shake vigorously until all ingredients are evenly distributed. If using minced garlic, ensure it's finely minced and mixes thoroughly with the dry ingredients.
  • Store: Keep the rub in a cool, dry place. This larger batch will last for several months.

Notes

For a deeper smoky flavor, substitute smoked paprika for regular paprika.
Remember that the amount of cayenne pepper determines the heat level. Start with 1 teaspoon and add more to taste if you like it spicier.
