Ingredients

  • ½ cup 120 ml whole milk
  • 1 cup 125 grams all-purpose flour
  • ½ teaspoon ground cinnamon
  • 2 large eggs
  • teaspoon fine sea salt
  • 6 tablespoons 75 grams granulated sugar
  • 1 ½ cups approximately 2 medium shredded apples (Honeycrisp, Granny Smith, or Fuji recommended)
  • teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • teaspoon ground ginger
  • 4-6 cups vegetable oil canola oil, or peanut oil, for deep frying

Instructions

  • Prepare Apples: Wash, peel, and core the apples. Using a box grater, shred the apples into a medium bowl. Set aside.
  • Whisk Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, and shredded apples until well combined.
  • Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, granulated sugar, ground cinnamon, salt, baking soda, ground nutmeg, and ground ginger. Ensure there are no lumps.
  • Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, stirring with a wooden spoon or spatula until just combined. Be careful not to overmix; a few small lumps are acceptable. Overmixing can lead to tough fritters.
  • Heat Oil: In a large, heavy-bottomed pot or Dutch oven, add enough frying oil to reach a depth of at least 3 inches. Heat the oil over medium-high heat until it reaches 365°F (185°C). Use a deep-fry thermometer to accurately monitor the temperature.
  • Fry Fritters: Carefully drop spoonfuls (about 2 tablespoons each) of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through.
  • Drain and Serve: Using a slotted spoon or spider, remove the fritters from the oil and transfer them to a wire rack set over a baking sheet lined with paper towels to drain excess oil.
  • Cool Slightly and Enjoy: Allow the fritters to cool for a few minutes before serving. They are best enjoyed warm.

Notes

For best results, use a deep-fry thermometer to maintain the oil temperature precisely. Don't overcrowd the pot when frying, as this will lower the oil temperature and result in greasy fritters. Serve warm with your favorite toppings.
