Ingredients

  • 1 ¼ cups 150g All-Purpose Flour
  • ¼ cup 60ml Vegetable Oil (such as canola oil or sunflower oil)
  • 1 cup 80g Apple & Cinnamon Flavored Malt-O-Meal Hot Cereal (uncooked)
  • 1 large Egg
  • ½ cup 100g Granulated Sugar
  • 1 Tbsp 15ml Baking Powder
  • ¾ cup 180ml Milk (whole milk or 2% milk recommended)
  • ½ tsp 2.5g Fine Sea Salt

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease or line a 12-cup standard muffin pan with paper liners.
  • Combine Ingredients: In a large mixing bowl, combine the all-purpose flour, vegetable oil, Apple & Cinnamon Flavored Malt-O-Meal hot cereal, egg, granulated sugar, baking powder, milk, and salt. If using, add the unsweetened applesauce at this stage as well.
  • Mix Batter: Stir all the ingredients together with a wooden spoon or spatula until just moistened. Be careful not to overmix; a few lumps are perfectly fine and ensure tender muffins. The batter will be thick.
  • Fill Muffin Cups: Evenly divide the batter among the 12 prepared muffin cups, filling each approximately ¾ full.
  • Bake: Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
  • Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Do Not Overmix: Overmixing develops the gluten in the flour, leading to tough muffins. Mix only until the dry ingredients are just incorporated into the wet.
For Moist Muffins: Always add the ½ cup of unsweetened applesauce. It significantly boosts moisture without altering the flavor profile.
Notes: These muffins are best enjoyed warm on the day they are baked. Store any leftovers in an airtight container at room temperature for up to 3 days.
