Ingredients

  • 1 to 2 lbs hamburger
  • 1 8 oz bottle of taco sauce
  • 1 can cream of chicken soup
  • 12 soft taco shells
  • 1-10 oz can enchilada sauce
  • Shredded cheese for topping

Instructions

  • Brown the Beef:
Cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
  • Combine Ingredients:
Return the beef to the skillet. Stir in the taco sauce, cream of chicken soup, and enchilada sauce. Bring to a simmer and cook for 15-30 minutes, or until thickened.
  • Assemble the Casserole:
Preheat your oven to 350°F . Tear the taco shells into bite-sized pieces. Spread the shell pieces evenly in the bottom of a 9×13 inch baking dish. Pour the meat mixture over the shells.
  • Top with shredded cheese.
  • Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.

Notes

  • For a spicier dish, use a hotter variety of taco sauce or add some diced jalapeños.
  • If you prefer a creamier casserole, you can add a can of evaporated milk to the meat mixture.
  • Serve with your favorite toppings, such as sour cream, guacamole, or salsa.
