Pearl Couscous

Pearl Couscous
Ingredients
- 2 tbsp olive oil
- 2 cups pearl couscous
- 3 1/2 cups chicken broth
- 1/4 cup lemon juice
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup fresh parsley chopped
- 1 tsp lemon zest
Instructions
- Pour enough olive oil into your medium saucepan to coat the bottom. Heat the oil over medium heat. You'll know it's hot when it starts to shimmer slightly.
- Add the couscous to the hot oil.
- Stir the couscous occasionally for about 5 minutes. You're looking for the couscous to turn a light golden brown. Be careful not to burn it! Toasting the couscous adds a nutty flavor to the final dish.
- Add chicken broth, lemon juice, garlic powder, salt and pepper. Heat on high until boiling. Reduce heat to low, cover and simmer for 15 minutes
- With the heat off, remove the lid and use a fork to fluff the couscous. This will separate the grains and give it a light and airy texture.
- Stir in the chopped parsley and lemon zest. The parsley adds a pop of fresh flavor and the lemon zest brings a bright citrusy aroma.
- Now is the time to taste your couscous and adjust the seasoning according to your preference. Add a squeeze of lemon juice, a pinch of salt, or some black pepper to brighten the flavors.
Notes
- Be careful not to overmix the couscous after boiling, or it can become mushy.
- If you prefer a stronger lemon flavor, you can add a bit more lemon juice or zest.
- For a richer taste, you can also stir in a pat of butter after fluffing the couscous.
